Description: Roots of the same quality as those of the Red Ace variety, but with a higher sugar content of 12 to 15% than the other varieties. Very productive. For a continuous harvest all summer, sow the seeds in the ground, in full sun, from May to the beginning of July or in mid-June for a fall harvest. Flavor is best when grown quickly and consistently.
Directions: It prefers light, somewhat sandy soil with a pH of 6.0 or higher. It is important to prepare your land well by removing all rocks and clods of earth to allow the roots to develop well. Work the soil well with compost or manure. Place the seeds 1 cm deep. Thin the plants to 8 cm in rows spaced at least 30 to 40 cm apart. Long periods of drought, followed by heavy rains, will cause color to fade. Drought also results in hard, woody roots. Just water well. The beets are tender when they reach half their size, but harden when larger. Young beet leaves are eaten raw in salads and mature leaves can be prepared like spinach.
