Description: Rice meal, shiitake mushrooms, plant-based protein, sun-dried tomatoes, sumac & wild porcini mushrooms hand-picked in the forests of Quebec. A classic of Italian cuisine, our forest risotto is reimagined to make room for wild mushrooms from Quebec. While remaining vegan, our recipe allows for a high protein content to make it a complete meal, with a final touch of sumac to stimulate the taste buds. Enjoy this dehydrated meal while camping, at the cottage, or at home!
Ingredients: Organic Arborio rice, organic soy protein, organic sundried tomatoes, mushrooms (shiitake, porcini), nutritional yeast, salt, spices, herbs.
Instructions: 1) Set the small sachet aside, and empty the main sachet into a saucepan with 2 tbsp. of oil. Cook over medium heat for 30 seconds. Optional: Add 1/2 cup of white wine. 2) Pour in a cup of water and cook until the rice absorbs most of it, stirring every 2 minutes. 3) Repeat step 2 until the rice is tender, then serve with a sprinkle of the spices from the small sachet. Note that cooking takes 20 to 30 minutes, and requires a total of 3 to 4 cups of water.
