Description: Organic sifted pastry flour is produced from organic wheat. Its fragile gluten and its low absorption capacity provide the characteristics sought in pastry making in order to maximize the friability of biscuits and the softness of cakes. Halfway between whole flour and white flour, this flour absorbs more than white pastry flour but allows lighter and less dense pastry products than whole flour. It's the best of both worlds. Organic sifted pastry flour is, as its name suggests, sifted flour, part of the bran has therefore been removed to make it lighter, however it retains part of the small bran which gives it a darker color. Use: The use of this flour is recommended for: cookies, pancakes, croissants, cakes, waffles, muffins and pastry. Organic sifted flour will keep for approximately 270-365 days. It is ideal to store the flour in an airtight container in a cool, dry place away from light or in the freezer.
