Description: This flour is produced from organic Khorasan. Its gluten, different from that of wheat flour, makes it more suitable for baking. Organic whole Khorasan flour is distinguished by its slightly orange color and its almost sweet taste, but without bitterness, reminiscent of notes of butter and hazelnut. Khorasan wheat contains 20-40% more protein than conventional wheat. It also contains fiber, iron, zinc, vitamins B2, B3 and E, phosphorus and magnesium. In recipes, it absorbs much more water than whole wheat flour, however, as the gluten of this flour is different, it is recommended to knead the dough much less because it will tend to release at the end of the kneading and become very sticky.
Use: The use of this flour is recommended for: baguettes, cookies, pancakes, cake, waffles, muffins, breads, dough and pie dough. Organic Whole Grain Khorasan Flour will keep for approximately 270-365 days. It is ideal to store the flour in an airtight container in a cool, dry place away from light or in the freezer.
