Use: It can be used to speed up the cooking time of grains, vegetables, and legumes, in addition to making them easier to digest. In Japanese cuisine, Kombu is the basic ingredient of dashi, their traditional broth. Like Royal Kombu, Kombu adds creaminess to recipes (it can replace cornstarch and other gelling agents).
